Heart-Healthy Snacks

Popcorn is the perfect snack food. Why?

Flavored Popcorn Snack

Pop the popcorn (1/3 cup kernels makes about 10 cups of popped popcorn). Put popcorn in large bowl. Spritz with "I Can't Believe It's Not Butter!" spray (approx 12-15 spritzes). Sprinkle 1 tablespoon of any of the following: dry taco seasoning mix, parmesan cheese, cinnamon & sugar, or nutritional yeast.

Cinnamon Popcorn

Air pop (most healthy) 8 cups of popcorn and place in large bowl. In a small saucepan, melt 2 Tbs butter on low heat. When melted, add 1/4 tsp ground cinnamon, 1 Tbs brown sugar, and 1/4 tsp vanilla extract, then stir for 1 minute to blend well. Drizzle the cinnamon-butter mixture over the popcorn. Toss well to coat the popped corn thoroughly.

Options for this sweet, flavorful recipe including mixing in chopped roasted peanuts, or pecans. Also, try adding chopped dried apples, raisins, or banana chips.

Healthy Cheese Popcorn

Make 2 quarts of popped popcorn. Pour into large baking pan. Preheat oven to 350°F. In a medium bowl, blend 1/2 cup Parmesan cheese, 1/4 tsp crushed oregano, and 1/3 c olive oil (or Smart Balance margarine, melted). Pour over the popcorn and toss to thoroughly coat each popcorn. Toast in over for 5-7 minutes. Serve warm. (Some people think this tastes better if served several hours later.)
